I have made these for the past 2 years for Christmas! They are really simple and cheap to make and so far everyone that has tried them, loves them. They are great to take to work or where there is going to be a fairly big group of people. One batch (about 30) is usually plenty but it just depends what size you make the balls!
    1. Preheat oven to 160 degrees.

    2. Line 2 baking trays with baking paper.

    3. Combine coconut, milk and lemon rind in a bowl. Add cherries. Stir until coconut mixture turns pink.

    4. Using one tablespoon of mixture at a time, roll mixture into balls.

    5. Place balls, 3cm apart, on prepared trays.

    6. Bake, swapping trays halfway, for 12 to 15 minutes or until balls are lightly browned.

    7. Cool on trays. Serve.

I can definately vouch for the yumminess of this recipe, lib made them last Chrissy and they were amazing!!
