1. Preheat oven to 160 degrees.
2. Line 2 baking trays with baking paper.
3. Combine coconut, milk and lemon rind in a bowl. Add cherries. Stir until coconut mixture turns pink.
4. Using one tablespoon of mixture at a time, roll mixture into balls.
5. Place balls, 3cm apart, on prepared trays.
6. Bake, swapping trays halfway, for 12 to 15 minutes or until balls are lightly browned.
7. Cool on trays. Serve.
