1. Heat a deep frying pan or saucepan over high heat. Add the oil, onion and garlic and cook until just soft.
2. Add the mince and cook, stirring, until brown.
3. Add the diced tomatoes, tomato paste and beef stock. Rapidly simmer for 10 to 15 minutes.
4. Stir through parsley, sugar, salt and pepper and cook until thickened to your liking.
